I have some amazing scoop to share. You can meet up with me at the Macy’s Culinary Council Cooking event on January 20th at 2 pm. This event will feature Chef Josh Capon sharing some of his favorite cooking techniques, culinary secrets and how to prepare some of his award-winning dishes.
I’ve recreated one of his delicious recipes below.
A little scoop about Josh Capon! He is the executive chef and partner behind Lure Fishbar, B&B Winepub and El Toro Blanco in New York City, and Lure Fishbar which opened recently in South Beach, Miami. Capon is also a four-time champion of Rachael Ray’s annual Burger Bash competition.
I don’t want to give too much away because now you have the chance to meet him in person. There will also be plenty of food and drinks to enjoy!

Guacamole / Pico de Gallo

Mix all ingredients together except for the avocado. Season with salt and pepper. This is called Pico de gallo, a raw tomato salsa.
It can also be served alongside the guacamole. When ready to serve, slice the avocados in half, remove the seed and scoop out the flesh with a spoon. Mash with a fork. Combine the salsa with the avocado and season to taste. Might need a little more lemon or lime juice or salt and pepper.
Serve with crispy corn tortilla chips, or soft corn tortillas. You can also garnish with shrimp cocktail, celery or carrot sticks.
