Every Tuesday night my husband and have decided to rally ourselves for a “Date Night-In”. It’s the one night we usually don’t have anything going on. Both of us tag team the kids through bedtime routine, so we can start the date asap. No cell phones, laptops and iPads allowed and we cross our fingers the kids stay in bed or no one gets sick. Each of us is in charge of part of the date. For this date, I didn’t do a whole lot which was nice. I suggested a board game not realizing a basketball game was on. Yes! Only the NBA finals. So of course we watch an amazing and intense game. We ate, we cheered and we had half-time entertainment. It was a great first Date Night-In and I am looking forward to many more.

Local Dad Scoop made my favorite basil martini to start while he cooked up Bobby Flay’s Shrimp and Grits recipe. It was his first time making this recipe and he did an amazing job. Super delicious and reminded me of my friend, who lives in Charlotte. The kitchen was also clean when he finished. I’d say that’s amazing date.

Shrimp and Grits

Cooked by Local Dad Scoop
4 cups water
Salt and pepper
1 cup stone-ground grits
3 tablespoons butter
2 cups shredded sharp cheddar cheese
1 pound shrimp, peeled and deveined
6 slices bacon, chopped
4 teaspoons lemon juice
2 tablespoons chopped parsley
1 cup thinly sliced scallions
1 large clove garlic, minced
Bring water to a boil. Add salt and pepper. Add grits and cook until water is absorbed, about 20 to 25 minutes. Remove from heat and stir in butter and cheese. Rinse shrimp and pat dry. Fry the bacon in a large skillet until browned; drain well. In grease, add shrimp. Local Dad Scoop used half the grease in the pan to cut down on cholesterol. Cook until shrimp turn pink. Add lemon juice, chopped bacon, parsley, scallions and garlic. Saute for 3 minutes. Spoon grits into a serving bowl. Add shrimp mixture and mix well. Serve immediately.
