My family loves Frittatas! The great thing is you can throw whatever is in your fridge into one. A Mexican Frittata is one of my go-to recipes when I need a quick breakfast, lunch or dinner. So forget about Taco Tuesday and whip this up for a change.

MEXICAN FRITTATA RECIPE
Recipe Type: Breakfast
- 4 eggs
- Cooking spray
- 1/4 cup cheddar cheese
- 1/4 cup of Mexicana Salsa (you can find it in the publix in the produce department)
- guacamole recipe here
- sour cream
- Whisk eggs in a bowl. Stir in cheese and salsa. Pour into non-stick pan. Turn heat on medium. When frittata looks like it is pulling from the sides of the pan, put the pan in the oven and broil for 2 or 3 minutes. Or when frittata browns on top. Slice like a pizza and serve with sour cream or guacamole.
