Who doesn’t love meatloaf?
My kids do! They can’t get enough meatloaf it seems. It’s an easy meal that you can usually hide a few healthy ingredients in. But with the months getting busier, I found that cooking a whole meatloaf can take too long.
I had an A-HA moment! What if I baked them in muffin cups? Then they would cook faster and I could probably freeze individual cups for leftovers.
So here is the Scoop on my No Fuss Meatloaf Cups that cook for only 25 minutes.
Here is my recipe for No Fuss Meatloaf Cups
2 lbs. Ground Beef
1 Cup of fresh Spinach, chopped
1/2 sweet onion, chopped
2 cloves of garlic, minced
1/2 cup of milk
1 Tbsp of Worcestershire Sauce
1 1/2 cups of breadcrumbs
1 15oz. Can of tomato sauce
1/4 cup of ketchup
Preheat oven to 350 degrees.
Mix all the ingredients together in a mixing bowl.
Take a non-stick muffin pan. Makes 12 Cups.
Take the meatloaf mixture and fill non-stick muffin pan.
Each cup should be level to the rim of the cup.
In the center of each meatloaf cup mixture, make a little hole about the size of your thumb.
Squeeze ketchup in each cup.
Bake for 25-30 minutes.
Serve with greens beans and make it a Happy Meal!
