When I walk through the grocery store this time of year, I’m surrounded by ingredients to come up with a pumpkin recipe.
I love Pumpkin Pie and Pumpkin Cheesecake, but what about a recipe for Pumpkin Waffles.
Here is a pumpkin waffle recipe the whole family will love!!
1 cup pumpkin puree
4 tablespoons melted butter
¼ cup brown sugar
¾ – 1 cup milk
1 ½ cups all-purpose flour
½ teaspoon baking soda
2 teaspoon baking powder
1 tablespoon cinnamon
1 tablespoon ginger
1 tablespoon allspice
Combine 1 cup pumpkin puree, 2 eggs, 4 tbsp. melted butter, and 1/4 cup brown sugar in a bowl.
In a separate bowl combine 1 1/2 cups all purpose flour, 1/2 tsp baking soda, 3 tsp baking powder, 1tbsp. cinnamon, 1 tbsp. ginger, and 1 tbsp. all spice.
Mix the wet ingredients into the dry.
Cook waffles according to your waffle

Seal them in a freezer ziploc bag.
When craving a pumpkin waffles, just pop in the toaster and then serve with syrup.

1 cup quick oats
¼ cup raisins
¼ teaspoon salt
½ teaspoon pumpkin pie spice
⅓ cup canned pumpkin
1 tablespoon oil (such as canola)
½ teaspoon vanilla extract
2 tablespoons honey
Combine all the dry ingredients.
Mix in the wet ingredients and roll into balls.
Serve or refrigerate them for later consumption.
